Light from the chandelier dances across gleaming floors. At “Main Dining BIACYA”, guests are served innovative modern French cuisine, rooted in the richness of Hokkaido—such as Ezo venison from Tokachi’s renowned ELEZO.
Executive Chef Norifumi Indo, who trained under Bernard Loiseau and M.O.F. Jacques Maximin in France, brings forth a dynamic world of gastronomy that blossoms on every plate.

Paying homage to the northern land, the seasonal menu features Ezo abalone vapeur, Hokkaido-style bouillabaisse, and our signature venison en croûte “Maria Callas,” paired beautifully with fine wines.

In the sunlit main dining room, breakfast is served with an abundance of fresh local vegetables, fruits, ham, and bacon, offering a vibrant start to the day.

At Sushi-dokoro Funami, guests can indulge in the freshest seafood—befitting the city of Hakodate, long celebrated as a gourmet destination. Behind the counter stands Junpei Kawabe, a rising talent who honed his craft for a decade at Hakodate’s renowned Sushi-dokoro Kihara. From plump scallops and whelks to herring, Atka mackerel, live squid, uni, and tuna, each seasonal Ezo-mae nigiri showcases the rich harvest of Hokkaido’s surrounding seas—offering flavors found nowhere else.
