Beneath the gleam of polished floors and the play of light from chandeliers, Main Dining BIACYA offers modern French cuisine found nowhere else— dishes such as our signature Plumier of the North, inspired by the local seas. Executive Chef Norifumi Indo, who trained under Bernard Loiseau and M.O.F. Jacques Maximin in France, brings to life a culinary world that is at once refined and bold.

Rooted in the rich landscapes of Hokkaido and sustained by dedicated local artisans, our cuisine celebrates the harmony between nature and craftsmanship.
Dishes such as “Gangi Skate from Nearby Waters with Cabbage and Sherry Vinegar Sauce,” the bite-sized baked piroshki “Piroshki Mignon,” and “Turnip and Black Earth,” evoking the frozen soil of Hokkaido, express the quiet strength of the land. We also present a deeply aromatic "Sea Urchin Butter", along with a refined "Ezo Abalone Risotto", woven into a seasonal progression of flavors.
Each course is thoughtfully paired with carefully selected wines, inviting you to experience a dialogue between the changing seasons and the bounty of Hokkaido.

In the sunlit main dining room, breakfast is served with an abundance of fresh local vegetables, fruits, ham, and bacon, offering a vibrant start to the day.
For guests staying multiple nights, we offer a choice of Western or traditional Japanese breakfast, allowing you to begin each morning according to your preference.
The Japanese breakfast features freshly steamed rice cooked in a Donabe pot, accompanied by seasonal soups inspired by Hakodate, simply grilled fish, and other carefully prepared dishes that reflect the rhythm of the region.
In addition, guests joining the early-morning excursion “THE HAKODATE” will be invited to enjoy an extended breakfast experience, where exceptional seafood such as Ezo abalone and sea urchin, sourced directly from Konishi Fish Shop, is also presented.

At Sushi-dokoro Funami, guests can indulge in the freshest seafood—befitting the city of Hakodate, long celebrated as a gourmet destination. Behind the counter stands Junpei Kawabe, a rising talent who honed his craft for a decade at Hakodate’s renowned Sushi-dokoro Kihara. From plump scallops and whelks to herring, Atka mackerel, live squid, uni, and tuna, each seasonal Ezo-mae nigiri showcases the rich harvest of Hokkaido’s surrounding seas—offering flavors found nowhere else.
